Good Morning Muffins

Lookie what I found I love cooking gonna go to culinary school once the munchkins are in school them selfs.
Here is a recipe I saw and tried it out today, it's 3 y/o ,11 month old and daddy aproved.
I live above 5000 feet /2500ish meters, so rise maybe more or less based your altitude.
all measurements are in imperial use Google to get a converter to get them to metric if need

Good morning muffins
4 cups all purpose flour
1/2 cup sugar
2 tbsp baking powder
1/4 cup butter, hard or soft
1/2 cup shorting soft
2 cups of Orange marmalade (a little more is just fine just more orange flavor)
1 cup Orange juice
2 tsp of vanilla (approximately)
3 eggs well beaten

topping
1/2 cup sugar
1/4 Brown sugar
1 Tsp cinnamon
1/4 tsp nutmeg
1/4 salt
2 tbsp butter melted
Wheat germ

Pre heat over to 375.

Sifft all dry ingredients

Combine butter and shorting with sifted flour mixture. Using a Pastery cutter will give best result, other wise your large cooking soon will do with a little more work.

Combine orange marmalade orange juice and vanilla mix well.

While stirring lightly pour in orange marmalade just barely combine.(get most of flour wet)
Stir in eggs, continue to combine until all flour is mixed.

Using a regular ice cream scoop portion in to the muffin tin. (2 oz serving size adjust to your tin)

Topping
Melt butter.

Combine all dry ingredients except wheat germ.

Slowly drizzle in melted butter while stirring.

Put about a heaping tsp on each muffin
Put about 1/2 tsp if what germ on each muffin

375 for 20-25 minutes

Cooking notes;
Rise is equal to half the volume of batter put in the tin.
Use a cooking spoon and very large bowl for mixing whisk will not work. For batter, med small bowl for topping is ok.

Yields about 2 dozen cupcake sized muffins.

They sound harder than they are just be sure you have everything ready before you start lol, 3 bowls one very large, two medium bowls one needs to be heat safe. one wooden spoon, sifter, ( fine mesh colander) all the ingredients plenty if work space, pans with liners if you choose to use them.
and any other tools of your preference, the muffin take very well to double coming so if your oven will hold two pans you can do the entire batch in one shot.
all told w ill be about an hour of time between prep and cook time.

They have just been wife approved lol aside from the Orange rind from the marmalade hehe.
thinking about try an Apple jam in place of the marmalade see how that turns out I'll let you know unless you try it first.
