Simple Blueberry Sauce

Hey guys - this is a quick and easy blueberry sauce that is perfect over different white or yellow cakes, ice cream etc.

Ingredients:
2 Cups fresh Blueberries (wild are better for you, but not as tasty)
1/3 Cup Sugar
1 Tablespoon fresh lemon juice (the stuff in the yellow lemon bottle will work...but...)
1/4 TEAspoon Salt
1/2 TEAspoon vanilla Extract

Smash up your blueberries, then mix together the sugar, lemon juice and salt.
Bring from cold, to a boil in a small sauce pan. Let it boil for 1 min stirring continuously.
Take it off the stove, immediately mix in the vanilla, then put it in the fridge. YOUR DONE!

I prefer it chilled, but I guess you could use it hot although I've never tried it that way.

Simple idea:

Buy those little angle food cakes the ones that are like 3 inches across.
Put about a handfull (1/4 cup) of blueberries on top of the cake.
Cover the blueberries with the blueberry sauce, and let it drip down the sides.
Top with a swirl of ready whip.
Flick just a little confectioners sugar on it for decoration - VERY LITTLE. (On the blue parts...)

You just made a quick, easy, and GOOD desert!

Ask the Chef! Ok... Psudo chef... either way he can tell you more about substituting than I. However, I think the principle would be the same and I think that it would work for most berries. You would need to adjust the sugar some depending on how sweet or bitter it is I would think...

I nearly missed this how is this possible. Gotta try this one out, Blueberry soup/sauce is a national drink in Sweden, atleast one day of the year. The day of the Vasaloppet (google it), 10000:s of skiers go 90km and together drink 100000:s of liters of this soup from heaven.
So I´ll gladly use your recipie and make a fortune, thx liq!

I think raspberries and mabuee blackberries would be a ok substitute. Watermelon is another story, its a different consistency and ive never tried to cook it down into a sauce. But since spring is here and melons will be around more, I might try to play around with it and see what I can do. Grapes might work but the skin on them is thicker and a little more tart. Id suggest adding a lil more sugar, or peeling the skin off then chopping them into chunks then cooking them. I bet this method would be amazing with strawberries, but id add a half cup of bailey's, or any Irish cream to the mix. Now that would be awesome over an angelfood cake or ice cream.
